What do you do with left over pesto, that’s not quite enough for another lot of pasta? Pesto crusted salmon of course. 15 minutes in the oven and dinner is done. That’s the kind of meal I like to make.

Yum! What are you serving them with? How did you roast those potatoes? They look so crispy. I love crispy potatoes!
Served with some sort of roasted potatoes and steamed greens.
Potatoes were just covered in a bit of olive oil and salt & pepper, put in the oven at 180 degrees C and left to cook for about half an hour. So put them in 15 minutes before the salmon. Give them a little shake half way through. Turned out nice and fluffy inside with a bit of crisp on the out. Yum!
